Classification of Lamb

The classification system indicates mainly the age and fatness of the carcasses. 

The age of the animal is determined by the number of teeth. 
It is represented by:
A – Youngest animal
AB – Slightly older animal
B – Older animal
C – Oldest animal

The fatness is indicated numerically: 
000 111 222 333 444 555 666. 
0 indicates no fat and 6 indicates a lot of fat.

EXAMPLES:
A1 – Young with very little fat
AB2 – Bit older with medium fat
B1 – Older with little fat
C5 – Oldest with a lot of fat
